Zero Carb Air Fryer Whole Chicken - Rotisserie Style

INGREDIENTS
1 whole chicken
1 sprig rosemary (or use Italian seasoning)
a bunch of lemongrass
(or other herbs if available, optional)
¼ cup oil (avocado
oil, or animal fat rendering)
1 tsp black pepper
salt (about 2 tsp)
2oz of butter for
brushing
INSTRUCTIONS
1. Mix together oil, rosemary and black pepper
2. Pat dry
chicken, inside and out
3. Season generously, inside and out
4. Stuff with lemongrass or any other
herbs if available
5. Let soak for at least 15 mins (or overnight in the fridge)
6. When ready to
cook, season all sides with salt
7. Roast in air
fryer for 18mins at 400F breast side down first
8. Turn and roast for another 18mins at
400F
9. Brush with butter, then roast for additional 6mins, or until it reaches 165F
10. Let rest
for at least 10mins before cutting
NOTES:
If you don’t have air fryer, you can use convection settings of your oven with the same temperature. If you have no convection setting, bake at 450F instead.
